Makes 4-6 servings.
Ingredients
1 lbs ground turkey
2 tablespoons grapeseed oil
2 medium onions, diced
4 fresh garlic cloves, minced
4 teaspoons cumin
2 teaspoons dry oregano
1/2 teaspoon
1/4 teaspoon cayenne pepper
4 tablespoons taco seasoning *
2 bell peppers, chopped
2 cups turkey or chicken broth
2 16oz cans white kidney beans
1 cup mozzarella cheese, shredded
1 cup sour cream
1 tablespoon fresh cilantro, chopped
*Note: this is the taco seasoning I use.
Directions
In a large pan, saute the onion and turkey in oil. When the turkey is no longer pink, add the dry seasonings and bell peppers. Mix until well coated.
Add broth, bringing to a boil then reduce the heat to simmer for minutes. Add beans, cheese and sour cream. Gently stir until well combined then add fresh cilantro.
