Lactation Cookies

These cookies can be enjoyed by anyone – not just a breastfeeding mother!

Makes approximately 48 medium sized cookies. 

Ingredients

2 cups salted butter, room temperature
2 cups of cane sugar
4 eggs
2 teaspoon of vanilla extract

6 cups old fashioned oats
4 cups all-purpose flour
1 cup chunky chocolate chips 
4 tablespoons Brewers Yeast 
2 teaspoons salt
2 teaspoons cinnamon
1 teaspoon baking soda

Directions 

In a stand up electric mixer (with a large bowl), beat butter and sugar. Add eggs and vanilla. Mix well.

In a separate large bowl add oats and chocolate chips. Sift in flour, cinnamon and baking soda. Add in yeast and salt. 

With mixer on lowest speed with cookie dough hook attachment, add dry ingredients to the bowl slowly as it gets stirred in. 

The bowl will be very full! Transfer everything to an extra large bowl and with clean hands, incorporate all the ingredients together. 

Line baking trays with parchment paper and scoop dough in tablespoon amounts. Don’t press down dough into tray. 

Bake at 350 degrees for 8-12 minutes, depending on size of cookies.

Stores well in freezer.
