Ingredients
225g quinoa
1 cup almonds
1 tablespoon tamari
2.5 cups zucchini, diced
4 cups spinach, chopped
Dash of cayenne
2 cups peas
2 limes, juiced
Directions
Cook quinoa according to package directions. Toast almonds on the stove top in the tamari for a few minutes until the almonds are fragrant. Set almonds aside. On medium-high heat, cook zucchini, spinach and cayenne for a few minutes until spinach is wilted.
To assemble the salad, add the almonds to the quinoa. Then add in the zucchini/spinach, peas and lime juice.
