Rice Noodle Soup

Makes approximately 5 servings . 

Ingredients
6 cups vegetable broth
1 cup carrots, sliced
1 tablespoon fresh ginger, grated
1 cup green onion, sliced
2 limes, juiced
12 oz mushrooms, sliced
4 tablespoons tamari
2 teaspoons sesame oil

4 oz rice noodles

crushed red pepper
tamari for seasoning

Directions
In a large pot bring the broth, carrots, green onion and ginger to a boil then simmer for 10 minutes.

In the meantime saute the mushrooms with tamari and sesame oil until the liquid evaporates and mushrooms are caramelized. Set aside.

Cook the rice noodles according to the package.

After the soup has simmered for 10 minutes and the carrots are cooked, add in the lime juice and season with tamari to your preference.

To your individual serving bowl, add broth, noodles and mushrooms. Enjoy!
