Makes approximately 6 servings. Use organic ingredients when possible.
Ingredients
2 lb chicken tenders
1 large fresh lemon, squeezed
drizzle of grape seed oil
salt and pepper
3 oz baby arugula
2 medium sized tomatoes, washed and diced
2 green onion, washed and diced
1 cucumber, peeled and diced
6 Tandoori Naan Bread
8 oz Tzatziki sauce
12 oz Greek dressing
Directions
Rinse chicken, pat dry with paper towel. In a bowl or ziplock bag, add chicken tenders, lemon juice, drizzle of oil, salt and pepper. Toss and let sit for half an hour before you’re ready to BBQ. Cook chicken on BBQ. Once finished, place chicken in a bowl and drizzle on some Greek dressing. Turn off BBQ and warm naan bread on grill.
Combine arugula, diced tomatoes, cucumbers, green onion in a bowl. Drizzle with oil, salt and pepper and gently toss.
Assemble naan bread. Spread tzatziki sauce on half of bread and Greek dressing on other half. Add arugula tomato salad. Top with sliced chicken. Fold bread in half and enjoy!
