Makes 9 large patties.
Ingredients
1/2 cup dry millet, rinsed
2 cups water
1 large onion, finely chopped
3 cups kale, finely chopped
2 stalks celery, roughly chopped
2 carrots, roughly chopped
2 teaspoons sea salt
2 teaspoons cumin
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1 cup millet flour *
*millet flour can be made by placing dry millet into high speed blender
Directions
Bring 2 cups of water to a boil. Add 1/2 cup dry millet and let simmer 15-20 minutes until cooked.
Place celery and carrots in food processor and process until they are all small pieces.
In a large saucepan saute onion for a few minutes until lightly browned. Add the processed veggies, kale, cooked millet and seasonings. Remove from heat and add millet flour.
Form patties on a baking sheet and bake at 400 degrees for 10 minutes. Flip patties and bake another 10 minutes until lightly browned.
Serve as a burger with spinach, avocado, bread, ketchup, mustard and/or onion.
