Makes 1 large pot.
Ingredients
1 cup green lentil, pre-soaked overnight*
1 large onion, diced
1 large bunch garlic, chopped
olive oil
1 cup rice (1/2 cup arborio and 1/2 cup brown rice), pre-soaked overnight
4 bay leaves
2 tablespoons sea salt
1/3 cup fresh lemon juice
Directions
In a large pot bring the lentils to a boil in 2L of filtered water. Reduce heat to medium high for 10 minutes (15 minutes if lentils were not pre-soaked).
During this time, brown the onion and garlic in olive oil for approximately 7 minutes on medium high heat.
If the lentils were not pre-soaked then drain and rinse them after they cooked for 15 minutes. Add 2L of fresh water and bring to a boil.
If the lentils were pre-soaked then skip the previous step.
Add rice, bay leaves, sea salt, 1/4 cup olive oil and the garlic/onion to the lentils. When boiling, reduce heat to medium high and cook for approximately 15 minutes (30 minutes if rice was not pre-soaked). Add fresh lemon juice at the end. Enjoy!
*Pre-soaking the lentils and rice: in separate bowls add water 2 inches above the lentils and rice. Leave on the counter overnight. Rinse well in the morning.
