Kombucha

This makes 2 gallons (approximately 8 L)

Ingredients

1 kombucha scoby

4 tablespoons organic loose leaf green tea

2 cups organic sugar

26 cups filtered water (for total recipe)

4 cups starter tea *

Directions

Make tea – steep loose tea in 2 L of boiling water.  Let cool to room temperature then strain tea. Dissolve sugar in 2 cups hot water. Add all ingredients in large glass container. Place scoby on top of liquid. Cover jar with thin cloth to keep out fruit flies.  Let the drink ferment for 7-10 days. It is done when the drink is carbonated, slightly tart yet slightly sweet.  Once done, place in air tight glass containers in fridge to stop fermentation. Flavour with freshly squeezed lemon and ginger.

* Starter tea comes from a previous batch of kombucha or apple cider vinegar.

Tips

Make sure hands are very clean.
Do not let scoby come into contact with metal/stainless steel.
Make sure all jars are very clean.
