Merlot Braised Beef Short Ribs

Makes approximately 8 servings.

Ingredients
16 meaty beef short ribs (approx. 6 lbs of ribs including bone)
salt and pepper
2 cups Merlot wine
5 cups beef stock
1/2 cup flour
2 tablespoons maple syrup
4 tablespoons Dijon mustard
2 medium onions, thinly sliced
4 garlic cloves, thinly sliced
10-15 sprigs fresh thyme

Directions

Preheat oven to 450 degrees F.

Season ribs with salt and pepper on both sides. Place in roasting pan in a single layer. Roast for 30 minutes uncovered.

In a large pot whisk together the remaining ingredients until boiling for 2 minutes. Remove from heat.

Once the ribs have roasted for 30 minutes, remove them from the oven and reduce the temperature to 325.

Pour the stock mixture over the ribs.

Cover with aluminum foil and bake for 3 hours until the meat is very tender.

Transfer ribs from the broth/stock into a serving dish when ready to serve. Enjoy!
