Pogacha Flatbread

Makes one large circle loaf.

Ingredients
4 + 1 cups all purpose flour
2 cups warm water
1 tablespoon yeast
1 tablespoon sea salt
olive oil

Directions
Combine yeast and warm water until yeast dissolves, a few minutes. Place 4 cups flour in mixer bowl. Add salt. Using dough attachment turn mixer on lowest speed and slowly pour in water.  Once the mixture is combined, slowly add in the last cup of flour until dough is all one piece (you may not need to add the entire cup.

Grease a large bowl with oil and transfer dough to bowl. Put a clean dish towel on top. Let sit for approximately 2 hours until dough rises. You can also put the covered bowl in the oven (oven off) with a pan of hot water.

Once dough has risen, use a spatula and wet hands to get the dough out of the bowl and onto a floured surface. Form dough into round ball add a little flour until it no longer sticks.  Lightly grease oven pan and dust with flour.  Then transfer dough to the pan. With your hands flatten the dough until it is about 1 inch thick.  Using a fork, pierce the bread all over (as seen in photo).

Bake at 380 degrees for approximately 35-45 minutes until the loaf is golden brown on top.

Serve warm with with herb oil.
