Ingredients
2 cups raw walnuts
1 tablespoon olive oil
2 tablespoons maple syrup
pinch of salt
pinch of cinnamon
pinch of cayenne
1/2 cup balsamic vinegar
1/4 cup olive oil
2 shallots, minced
pinch of sea salt and pepper
12 oz organic spinach
2 ripe pears, thinly sliced and deseeded
1/2 cup fresh or dried cherries or cranberries
Directions
Toast walnuts on parchment paper at 350 degrees for 7 minutes. Combine 1 tablespoon olive oil, maple syrup, salt, cinnamon and cayenne in a bowl. Add toasted walnuts to bowl. Coat walnuts. Return to oven for 4-6 more minutes until fragrant and golden.
To make the dressing, whisk together balsamic vinegar, 1/4 cup olive oil, shallots, salt and pepper.
Combine spinach, pears, cherries and walnuts. Add dressing and serve.
