Ginger Tamari Pasta Salad

Makes a very large bowl of pasta.

Ingredients

2 (16) oz packages of rice pasta

1/3 cup olive oil
2/3 cup tamari sauce
2/3 rice vinegar
2 tablespoon ginger, freshly grated
4 garlic cloves, minced
2/3 cup cilantro, chopped

1 bunch green onion, chopped
2 cups snow peas
3 carrots, grated
1 orange bell pepper, diced
1 red bell pepper, diced

Directions

Whisk olive oil, tamari, rice vinegar, ginger, garlic and cilantro. Cook pasta to al dente. In an extra large bowl, combine the remaining ingredients.  Add dressing to vegetables. Lastly, fold in pasta. Enjoy!
