Chocolate Cashew Chia Balls

Makes a small batch.

I usually double this recipe but make it in two batches since my food processor isn’t big enough to hold double the amount at once.

Ingredients

1 cup medjool dates, pitted
1/2 cup unsalted cashew butter
2 tablespoons cacao powder
1 tablespoon chia seeds
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Directions

Place all ingredients in a food processor using the “s” blade. Process until everything is blended evenly and the dates are no longer chunky. Stop the processor several times to scrape down edges to help everything mix well.

Using clean hands, roll out bite size balls. Store in the fridge or freezer for a cool treat!
